Fall is one of my favorite times of year and honestly, it doesn’t get much better than Fall in New England. Some of you may know that I have been sharing more of a healthy balanced lifestyle on my blog and being more mindful of what I eat. Last week I had a little Harvest fun in the kitchen and made a healthy version of pumpkin and oatmeal cookies.

Most of the ingredients were found at HomeGoods in their gourmet cooking and wellness section. A huge part of eating healthy is incorporating healthy alternatives to traditional flour and sugar. HomeGoods has a variety of coconut flours, sugars and gluten free products that are very affordable.

This pumpkin cookie recipe couldn’t be any easier to make and it’s a combination of 3 different recipes I found in my mom’s cookbook from the Family Reunion she attended recently in Maine. I wasn’t really sure how they were going to come out but they are yummy!

Harvest Orange Leaves Bakware + Pumpkin Cookie Recipe

Ingredients:

1 cup canned pumpkin, 2.5 cups oatmeal, 1/2 cup coconut flour, 1/2 cup coconut brown sugar, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tsp vanilla extract, 1/4 cup melted butter (or healthy alternative), 1 small egg.

Stir by hand until batter is mixed. If batter seems a little dry, add a tsp of water or two.  Form cookie balls and press flat on sprayed/greased  cookie sheet. For added flavor, I shred a bit of chocolate from a semi sweet chocolate bar I had (optional).  Bake 350 for 10-12 minutes or until fork removes clean. These cookies took 5 minutes to prep and 10-12 minutes to cook. Batch made 15 cookies.

I picked up a variety of baking stoneware featuring leaves and orange accents, mixing dishes, measuring cups and spoons and pre-made banana and pumpkin bread mixes. To finish off the look, I bought almost all the pumpkins HomeGoods had at one store, you can never have enough pumpkins!

The orange pumpkin canisters were my mom’s favorite along with the adorable sign with the dog driving the truck. The canisters are great for flour and sugar but we are using them for dog treats!
