A Sweet Treat for Mother’s Day

Mother’s Day is almost here so today I’m sharing a few ways to make Mom feel important and loved. With a few simple touches, you can create a little magic for your Mom (or any special Mother in your life). Let’s get to it!

Of course, I turned to HomeGoods #GoFinding inspiration to make a special Mother’s Day. This year Mother’s Day will be different because it’s the first year my dear Grandma (my Mom’s Mom) isn’t with us.

As I shopped to put something special together for my own mother, thoughts of Gram inspired my #GoFinding adventure. When I saw this tablecloth and coordinating napkins with a strawberry pattern, I knew I’d found what I was looking for.

For years, my Grandma was known for her strawberry rhubarb pie. (My Mom is known for it as well.) I thought it’d be special to create a celebration inspired by that pie. (You can get my Strawberry Rhubarb Crumble Pie recipe here.)

Instead of a pie, however, I baked this Strawberry Rhubarb Cake. The recipe is from my Grandma’s recipe book. One of the things I love about old-fashioned recipes is that they are usually pretty simple. In fact, you can make this Strawberry Rhubarb Cake using just one mixing bowl and a spatula. Fewer dishes = less cleanup.

To serve with the cake, I made homemade whipped cream. I simply whipped heavy cream and a little sugar until stiff peaks formed. To me, it’s the little touches that make a dessert feel extra special.

I decided to also serve this Elderflower Rose Lemonade. (Another HomeGoods find!) The typography on the bottle grabbed my attention because it suited my theme so well. Although the soda is nonalcoholic, you could certainly pair it with a splash of vodka or mix it with Champagne.

As you can see, with just a couple simple ideas, a quick recipe, and memories of the past, you can create a truly special day for your mom.

Let me walk you through my recipe in case you’d like to bake up something similar.

Strawberry Rhubarb Cake
Serves 12

Here’s what you will need:
2 1/2 cups flour
1 1/2 cups brown sugar
1 teaspoon salt
1 teaspoon baking soda
2/3 cup canola oil
1 cup buttermilk
1 teaspoon vanilla extract
1 cup chopped rhubarb
1 cup chopped strawberries
1/2 cup chopped walnuts
Strawberries for garnish

1/2 cup sugar
1 tablespoon melted butter

Begin by preheating your oven to 325 degrees F. Coat an 8×10-inch pan with baking spray and set aside.

In a large bowl, whisk together the flour, brown sugar, salt, and baking soda. Add the canola oil, buttermilk, and vanilla extract and stir to combine. Fold in the rhubarb, strawberries, and walnuts. Transfer the batter to the prepared baking pan.

In a small dish, mix together the sugar and melted butter. Sprinkle evenly onto the top of the batter.

Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean. Serve with freshly whipped cream and a strawberry for garnish.
