Did you know that today is National Peach Cobbler Day?! It is! And since peach cobbler is a quintessential summer dessert, I wanted to teach you how to make it. To keep things interesting, we are giving it a little twist by making these adorable Mini Peach Cobblers!

Whenever I’m in HomeGoods on a #GoFinding mission, you can be certain I hit up the kitchen section. Although home decor has my heart, baking for the people I love brings me immeasurable joy. On my most recent #GoFinding mission, I spotted these mini loaf baking dishes, and my brain went into overdrive. I immediately thought of several uses for them, so into my cart they went.

Little did I know they would be ideal for serving up these super cute mini peach cobblers. If you follow my blog, you’ll know that I love reinventing the classics, and this recipe is no exception.

I ended up using one of my favorite peach cobbler recipes and splitting it among these four mini loaf pans. As I mention in the recipe below, depending on how much you love dessert, each of these mini dishes could serve two people. However, if you’re as wild about dessert as I am, you’ll want an entire one for yourself.

When it comes to crisps, crumbles, and cobblers, to me the best part is the pastry layer on top. Because a cobbler is more cake-like, I think it works especially well with peaches. And this recipe makes creating a cobbler practically fool-proof.

Here’s how to make them:

Mini Peach Cobblers
Serves 8*

You will need:
4 1/4 cups pitted and cubed peaches (about 8 whole peaches)
1/4 cup sugar
1/4 cup brown sugar
1 tablespoon lemon juice, freshly squeezed
1 teaspoon cornstarch
1/4 teaspoon kosher salt
1/4 teaspoon almond extract
Pinch of nutmeg

Biscuit Topping:
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon kosher salt
6 tablespoons unsalted butter, chilled
1/2 cup milk

For garnish:
2 tablespoons sugar
1/2 teaspoon cinnamon

Whipped cream (or ice cream) for serving

Begin by preheating your oven to 400 degrees F. In a large bowl, stir together the peaches, sugar, brown sugar, lemon juice, cornstarch, kosher salt, almond extract, and nutmeg. Divide this peach mixture among four mini loaf pans or pour it into one 8×8-inch baking dish. Bake for 10 minutes.

In the meantime, prepare the biscuit topping. In a large bowl, whisk together the flour, sugar baking powder, and salt. Using a pastry blender, cut in the butter until it resembles peas. Then, with a fork, stir in the milk just until the mixture comes together. Avoid overmixing.

Drop spoonfuls of the biscuit dough onto the peaches. Smooth slightly to avoid any overly thick areas. In a small bowl, combine the 2 tablespoons of sugar and 1/2 teaspoon of cinnamon. Sprinkle the top of the dough with the cinnamon and sugar mixture.

Return the cobbler to the oven and bake for an additional 25-30 minutes. The cobbler will be bubbling and browned on top. A toothpick inserted near the center should come out clean.

Allow the cobbler to rest for at least 30 minutes. Serve warm or at room temperature with whipped cream or ice cream.

*This makes four mini pans of cobbler. Depending on your appetite, each pan can serve one person or two.

Once my cobblers were baked and ready to serve, I thought it’d be cute to style everything on this large wooden tray that I also found at HomeGoods.

Paired with serving pieces, a colorful bouquet, and a big jar of whipped cream, I’d say this is dessert perfected! Wouldn’t you?
